    Last week I told you all about a delicious Phase 2 Recipe for Chicken Bruschetta - That recipe was courtesy of Rinazamp, who is one of our fabulous HCG Forum members.

    Well, Rinazamp has been so kind as to share another HCG Recipe with everyone. And let me tell you, this one is deserving of an award - It's for Stuffed Portabella Mushroom Caps.

    So if you are anything like my wife Suzy you are going to absolutely love it.

    Stuffed Portabella Mushroom Caps

    Portabella mushroom cap
    Small can of tomato paste
    Rotel diced tomatoes with green chilies
    Ground beef (94/7)
    Garlic
    Italian seasoning
    Salt
    Pepper
    Onion powder

    Directions:

    Clean out portabella mushroom caps of brown stuff and stem.
    Sprinkle with garlic powder, onion powder and Italian seasoning.
    Roast in BBQ or oven at 425 for about a 1/2 hour.
    Brown meat with fresh garlic, onion powder and Italian seasoning.
    Add tomatoes and paste.
    Scoop a spoon full into cap.
    Return to oven for 10 minutes... serve... YUM!
